The pantry challenge is allowing us to eat our existing food so we that we can intentionally replace it with wholesome food. I’ve been on the hunt for good snack ideas and these muffins are so yummy it’s hard to believe they’re healthy too! You may want to double the recipe so you can freeze some (or at least have them last more than two days in your house).
Pumpkin Chocolate Chip Muffins (from Faithful Provisions)
4 eggs
1 (16 oz) can pumpkin
1/4 cup oil
1 cup applesauce
1 tsp. vanilla extract
1 cup sugar
2 cups whole wheat flour
1 cup white flour
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
1.2 cup semi-sweet chocolate chip morsels
Mix all wet ingredients in large mixing bowl, then combine all dry ingredients in another bowl. Add dry ingredients into wet ingredients. Then fold in chips.
Cook in 400 degree oven for 14-17 minutes. (I like to make mini muffins which take about 11 minutes).



















Think I need to try these. I have a can of pumpkin that I needed to use. Although my husband just used all of my white flour making pizza dough!
